Broccoli microgreens taste distinctly of broccoli, just brighter and more peppery. Radish microgreens bring real heat. Pea shoots taste like fresh snap peas.

The Nutrition Case: Small Greens, Big Numbers

The headline reason people seek out microgreens is nutrient density. A landmark study from the University of Maryland and USDA, published in the Journal of Agricultural and Food Chemistry, tested 25 varieties of microgreens and found that, on average, they contained four to forty times more concentrated vitamins and carotenoids than their mature counterparts, measured gram for gram.

Some standout comparisons from that research:

  • Red cabbage microgreens had roughly 40 times more vitamin E and 6 times more vitamin C than mature red cabbage
  • Cilantro microgreens had about 3 times more beta-carotene than mature cilantro leaves
  • Green daikon radish microgreens were among the highest in vitamin C, vitamin K, and carotenoids of all varieties tested

Why the difference? A microgreen is a plant investing everything it has into rapid, resilient growth. That short window of development concentrates vitamins, minerals, antioxidants, and phytonutrients into a tiny package — before the plant "spends" those resources on the woody stems, leaves, and bulk of full maturity.
